I had this smoothie when my friend Crystal made it for me when I visited her and her adorable great dane pup in Raleigh a few weekends ago. (I love that she always greets me with a smoothie when I visit!) After she made it for me, I immediately bought mint when I got home and I made it the next day, and the next day, and the next day, and…you get it. It’s amazing. I had it for breakfast for a while and now it’s been my afternoon snack to satisfy my sweet tooth.
Mint Chocolate Chip Protein Smoothie
- 1 frozen banana
- 1 big handful spinach
- 1 scoop vanilla protein powder (I used Vega*)
- 1 cup almond milk
- 5 mint leaves
- 1 T cacao nibs
Blend it all together, except the cacao nibs, until creamy, adding more milk if necessary for desired thickness. (If you use a full scoop of vega, you’ll definitely need more milk!). Add the caco nibs and pulse in the blender a few times. Top with extra cacao nibs.
