Happy Monday! I hope whatever you’re up to this week with your family, work, social activities, etc., all goes great! Maybe you can make it even better with a great meal with loved ones.
This is what I’m eating this week.
S – Spaghetti Squash with Paleo Meatballs (I have a super simple recipe for meatballs that I’ve never shared with you. But I shall!)
M – Lentil Soup (I kind of winged this tonight and it turned out great! Recipe soon!)
T – Kale Chopped Salad with Maple Almond Vinaigrette
W – Quinoa Salad with Butternut Squash, Dried Cranberries & Pepitas
Th – Mango & Peach Salsa Crockpot Chicken (served either as tacos or taco salad)
F – wing it.
S – wing it.

I’ve also been drinking copious amounts of this sparkling water.
I think I like the sparkling citrus water from Trader Joe’s better (in the dark blue bottle), but I couldn’t brave the Sunday crowds there yesterday to restock so I got this at Whole Foods.
This is how I’m sweating this week.
S – rest
M – speed work on the treadmill [this didn’t go very well this morning. I had no energy and was beat so I bailed after 15 minutes and tried to eek out 10 more minutes on the elliptical before calling it quits]
T – yoga
W – tempo run
Th – easy run + upper body weights
F – elliptical
S – 5K race
Whatcha cookin’ up this week? What workout are you most excited for? What do you typically drink with dinner? I love having a glass of wine with dinner but I’ve been trying to drink less – it makes the wine taste better when I have it less often, I have more energy and focus during the day, and I sleep better a night.

atI love red wine with dinner, but we try to limit it to the weekends — it gives us something to look forward to 🙂

athad lentils for dinner last night! so that means I’ll be eating them as leftover lunches for a few more days…….. good thing I love the sorta-raw chili I made them in!
I had to stop drinking wine during the week. I do NOT sleep well at all with anything in my stomach before bed………. hard lesson to learn and hard to keep up since I snack so much. But when I sleep like a rock I’m such a happier person 🙂

atMade an arugula, heart of palm, art heart, apple salad with an egg on the side for a quick easy dinner. Roasting up some spaghetti squash tomorrow and stoked about that! That soup looks great and I have yet to have some lentils this fall season.
Red wine with dinner a few time a week, normally just water or sparkling water. I agree, the TJ’s brand is better than WF.
Today I pushed through a 6 mile speed work run after having some hip pain yesterday. Looking forward to a nice outdoor run this week in the 70’s GA weather!
