Happy Friday! I got out of bed this morning thinking I would head out for a run, but instead I’ve been having a leisurely morning, drinking water lemon water, online shopping at Nordstrom (I desperately need black flats – I think I’m getting these Ivanka Trump Chic Flats), and will probably take Maizey for a walk in a bit. There is something I LOVE about being up early and not working out. It’s so peaceful. I may do a short, easy run just to get the blood moving but my intended 5 miler just isn’t happening.
Canned Coconut Milk
I bought canned coconut milk to try in my coffee for the first time and I’m not sure I can go back to any of the non-dairy milks and creamers in the refrigerated section. It’s so creamy and blends in perfectly. I bought the full-fat kind because I’m making crepes for Sunday brunch (shhh don’t tell Tommy, it’s a surprise) and want to make coconut whipped cream to top them. For coconut whipped cream, you need full-fat coconut milk. Stick the can in the fridge, scoop the thick cream off the the top and set aside for your whipped cream (complete directions in that link above). Then you can stir what’s left in the can for a lighter milk option for your coffee. I also put a little of the thick cream in my coffee. And on a spoon and in my mouth. Because it is so dang good.
If you follow me on Instagram, you’ve noticed I’ve been complaining about some gut issues lately. I’ve been having INSANE bloating and just feeling swollen all over – arms, legs, face. I’ve also been having insane weight swings – talking 6-8 pounds in a DAY, so I know there have been some retention issues. After listening to The Nourished Podcast (which I blogged about last week) about digestion, I thought I’d try their advice to eat paleo, drink water lemon water in the AM, add in probioitics and L-glutamine, take apple cider vinegar with meals, and take magnesium at night. I’ve noticed a world of difference. Of course, I haven’t been strictly paleo, but I’m following it as best I can.
On that note, a friend let me borrow her Practical Paleo cookbook that I’ve been eyeing for a long time even before all this started. (Thanks Alise!) I love it so far! The recipes are simple and tasty, but I’m especially loving the intro and explaining all the science behind gut health. Super fascinating. I could read about gut health impacting overall health for days. Aaaand I have.

I had this wine at book club in Charlotte before I moved and then my lovely friend brought a bottle over on my last night in Charlotte. It is SO good and she promised the price point was great. I haven’t tracked down another bottle yet, but I need to ASAP.
