Happy Friday! I am so excited for this weekend since I have tons of fun things on the agenda. First up – GARTH BROOKS!!! I am so excited to see him live tonight! (Excited is probably the biggest understatement of the day.) Tomorrow I’m going to a tailgate/birthday party and then having dinner with some friends. And Sunday, I am headed to a baby shower for Melissa, who has been reading my blog for a while and we became real-life friends when she moved to Raleigh.
Alright, let’s get to some things I’ve been loving lately!
This gluten-free pumpkin muffin mix. Katlin, a blog reader, emailed me after I posted a while ago that I was looking to master gluten-free pumpkin bread. She actually started her own company, Simple Mills, a few years ago after finding how difficult it was to make or find whole-food, gluten-free baked goods. I LOVE that this mix doesn’t have starches (potato and rice starch is very common in GF goodies) and the muffins were awesome!
This necklace my sister-in-law sent me after I’ve been having a rough patch. <3 It’s simple and small and I love it. And I get so many compliments on it.
Pre-cut butternut squash. THE. BEST. Why have I been cutting it all this time?! Totally worth the slight increase in cost for the convenience, especially since I go through roasted butternut squash so quickly (as seen in this salad and this soup and this soup).
Homemade gluten-free almond meal biscotti. I LOVE biscotti and have been meaning to make some for a while. I didn’t top most of the batch with chocolate but the ones that are topped with chocolate are soooo good. The others were good too without it, and not too sweet (like, at all) which I liked.
Finally finding a way to get Maizey to eat that doesn’t involve adding olive oil, cheese or an egg to her food. She’s super finicky about eating. But, if I pour boiling water over her food, let it sit to soften and cool down a bit, she eats it right up. We’ll see how long this trick works!
This little set-up on my coffee table. I LOVE The Creative Pallet Utah sign (my sister-in-law owns the company and has so many cute designs) with the squash and pumpkins in front of it. Maybe I am getting a hang of this decorating thing.

atAh! I won those simple mill mixes (all of them) in a giveaway! I haven’t tried them yet though, but they seem perfect!
Pre-cut is always they way to go with butternut! I’d like to save my fingers, thank you 😉

atIt’s such a game changer, isn’t it? I am totally okay with paying a bit more. Although I recently did learn that you could cook it in a slow cooker before cutting it, so I’ll have to give that a try!

atI’m also a fan of microwaving it for a few minutes before I cut it just to make it less scary haha.

atI’ve done the boiling water on dog food to soften as well. I rotate water with chicken/beef broth or adding green beans (filler food but not calorically dense) whenever Tierney and Ava get finnicky. Hope that helps!

And I have the world’s pickiest dog (made worse because he has about a million allergies – we actually start weekly shots for his environmental allergies this week????) and I found a food he loves. I mix it with his dry food (because it’s too pricey to just feed on its own) but it’s all human food freeze dried and then you rehydrate with hot water and let it sit 5 minutes… I call it his oatmeal it’s called the honest kitchen. Maizey may like it. I found it at a pet expo and they have free samples maybe they do on their website?
