Gluten-Free Blueberry Peach Cobbler

 

Fresh peaches and fresh blueberries and fresh figs are pretty much the BEST. I’m stocking up on them every time I go to the store or farmers’ market because they won’t be around long. I was a little bit ambitious with all the blueberries and peaches I bought last week so I decided to make a cobbler to take to a recent get-together. The great thing about cobblers is that you can really sub in any fruit and it’ll generally turn out fine. But I highly recommend this combo.

Make blueberry & peach filling: Place your fruit into a large bowl. In a smaller bowl, combine the sugar, lemon zest and flour and whisk until well combined. Gently toss with the fruit and place in your baking dish. It’ll look something like this. I highly recommend eating some of the fruit with this mixture on it. But not all of it!! Prepare the topping: In a medium bowl, whisk together flour, sugar, baking powder, salt, cinnamon and nutmeg until well combined. Using a pastry blender, cut butter into flour mixture until it resembles a coarse meal. In a small bowl, whisk vanilla into beaten egg. With a fork, gently blend egg and vanilla into flour mixture until moistened and dough starts to hold together. Continue to blend gently with fingertips until well combined.

Assemble and bake the cobbler: Sprinkle the dough topping over the fruit. It should be in clumps. (Is there a better word than clumps? Chunks? Ew, worse. Please give me a substitute.)

Bake in the 375* preheated oven until topping is golden brown and filling is cooked through and bubbly, about 40 to 45 minutes. Cover with after 25 minutes. Remove foil and carefully transfer to wire rack to cool slightly before serving.SAMSUNG CSC

Gluten-Free Blueberry Peach Cobbler

Ingredients

For the Blueberry Peach Filling

  • 3 cups fresh blueberries, rinsed and dried
  • 3 cups fresh peaches, diced into blueberry-sized pieces
  • 1 scant cup coconut sugar
  • 2 teaspoons (4 grams) freshly grated lemon zest
  • 3 tablespoons gluten-free all-purpose flour; I like Cup 4 Cup. You can use regular flour too if you tolerate that!

For the Topping

  • 1 1/4 cup plus 1 tablespoons gluten-free all-purpose flour  (or regular if you can do that!)
  • 6 tablespoons coconut sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 6 tablespoons Earth Balance, chilled & cut into bits (or good ol’ butter!)
  • 1 large egg, slightly beaten
  • 1 teaspoon pure vanilla extract

Instructions

Arrange oven rack in lower third of oven and preheat oven to 375ºF. Lightly spray a 2-quart baking dish.

(1) Prepare the blueberry & peach filling: Place blueberries and peaches into a large bowl. In a smaller bowl, combine the sugar, lemon zest and flour and whisk until well combined. Evenly pour over fruit and gently toss.Place the mixture into your baking dish.

(2) Prepare the topping: In a medium bowl, whisk together flour, sugar, baking powder, salt, cinnamon and nutmeg until well combined. Using a pastry blender, cut butter into flour mixture until it resembles a coarse meal with small pea-sized pieces of butter. In a small bowl, whisk vanilla into beaten egg using a fork. With a fork, gently toss beaten egg and vanilla into flour mixture until moistened and dough starts to hold together. Continue to toss and blend gently with fingertips until well combined yet taking care not to overwork the dough.

(3) Assemble and bake the cobbler: Evenly sprinkle the dough topping over the fruit. Bake in the 375* preheated oven until topping is golden brown and filling is cooked through and bubbly, about 40 to 45 minutes. To prevent the top from burning or getting too dark, cover with sheet of foil after 25 minutes of baking. Remove foil and carefully transfer to wire rack to cool slightly before serving.

(4) Devour. Serve with ice cream (regular or dairy-free!).

If you had to pick one dessert, would it be cake, pie or cobbler? COBBLER all the way for me! Perfect combo of fruit and carby goodness. Plus, it’s amazing warm or cold!
