This Week’s Gluten-Free Meal Plan — healthy & quick meals for busy weeknights!

This week’s healthy gluten free meal plan has a mix of comfort food and a few lighter meals. Plus, they’re all quick for busy weeknights too!

Below is this week’s healthy gluten free meal plan! It’s heavy on recipes from Run Fast Eat Slow, but they’re all ones I haven’t tried from the cookbook so it’ll be fun to try them out. I can already vouch for the broccoli chevre soup since I made that last night: it was awesome. Tommy loved it too. The carnitas recipe is one I made last week and Tommy said was one of the best things I’ve ever made. He requested it again and I was happy to oblige since it’s so easy. 🙂

This Week’s Healthy Gluten Free Meal Plan

Su – Broccoli Chevre Soup from Run Fast Eat Slow + Grilled Cheese 

M –Shakshuka with Feta (for some reason that link is behind a paid firewall and I can’t access it after using it for YEARS, so I ended up using this recipe tonight, except I used red peppers). I served it with an Against the Grain baguette (found in the freezer section of Whole Foods).

T – Crockpot Beef Carnitas

 W – Kale Radicchio Salad from Run Fast Eat Slow + leftover carnitas. We have a get together with our church small group so this will be quick to eat beforehand since I prepped the salad on Sunday afternoon.

Th – Wild Salmon Sweet Potato Cakes (also from Run Fast Eat Slow!).

F – Seared salmon + roasted sweet potatoes + roasted broccoli. Gotta carb up before my 20 miler on Saturday morning!

Sa – TBD. Hopefully a burger! 

Here’s a pic of tonight’s shakshuka. I’ve been making this for years and I’ve never taken a picture with good lightning. Probably because it’s my go-to in the winter and it’s always dark when we eat dinner! 😉 It’s my ultimate comfort food go-to.

    I love Run Fast Eat Slow…you must make the superhero muffins!!! They are amazing. I’ve also tried the sweet potato breakfast cookies. Thanks for the beef carnitas radicchio salad recommendation…these will make the rotation next week!

      I LOVE the superhero muffins!!!! I haven’t made them in far too long though!

      Did you like the sweet potato breakfast cookies? They were pretty dry when I made them. Wondering if I should give them another shot!
