Just Beet It

Today, I welcomed four things back into my life that have been missing for too long.

  1. The Sun (aka Vitamin D) – The sun was out today! So, I took advantage of it and actually went outside. Into the sunshine. For an extended period of time. It was pure bliss.
  2. The Walk – To soak up the sun, I took Maizey on a walk over my lunch break. The poor puppa has been neglected in the walk department with our crazy schedules and the crazy weather. When I pulled out her backpack, she ran to the back door, sat down and waited for me to put it on her. What a good girl.

FYI, if you have a high-energy dog, I highly recommend getting a dog backpack so your dog can carry your snacks for you to help exercise him/her. We first read about it in one of the Dog Whisperer’s books – I love Cesar – and it helps to tire your dog out more quickly. We have cans of tuna and beans in there; of course, check with your vet first, but it’s been great for us. She’s calmer on walks and also has more confidence. She totally struts when it’s on.

3.  The Joy of Cutting Beets

After chugging some leftover green purple brown smoothie, I stuck some beets and carrots in the oven to roast (with olive oil, salt, pepper, and thyme) while I walked Maizey. Unfortunately, I was gone a little longer than I thought (I really should wear a watch) and came home to carcinogenic slightly burned veggies.

Of course I still ate them. Silly question. Although, most of the beets were really inedible and went in the trash (hence the reason for there being only three beet slices on the plate). Pink hands for nothing.

4. The Pasta Mama – I saw this on the Food Network a few months ago and it’s become one of my favorite dishes. Spaghetti with scrambled eggs and parmesan. Seriously. I promise it’s not gross. Quite the opposite; you can get all the deets here. In the meantime, feel free to salivate over my rendition. (I used whole-wheat spaghetti, and I hate to break it to you, but this really is better with nutritionally-void white spaghetti.)

I had roasted grape tomatoes (400 degrees, olive oil, salt and pepper) on the side. Goodness, almost feels like Christmas with that red and green. Dessert was a sliced apple with cinnamon, nuked in the microwave for about a minute.

I taught PowerSculpt tonight and I’m pretty tired…and I have to get up at 5 AM to teach spin so I’m going to try to get to bed early (ha!). I’ve got a new playlist for you tomorrow just in time for Valentine’s Day.

    I need to bring back chicken salad! I have an amazing recipe (totally healthy version- not just a bunch of mayo!) that I will be sure to post very soon. I bet you feel great after getting in a nice walk, especially in the sun! That sounds so nice right about now!

    I only wear a watch when teaching classes. I know most of the ladies in my midday classes are in a rush to get back to work, so try to give them time checks. I don’t when I run because I have my i-pod and all other times I have my phone.

    Warm weather…I’m so ready for that to be back I can’t stand it! I do wear a watch – it’s a Polar HR monitor watch that I got during my training days 🙂

    Whole wheat english muffin topped with cottage cheese and a drizzle of honey. I promise it is soooooo goooooood!

    I can’t stand wearing a watch!!! They drive me bananas!! I only wear a watch when I’m running during a race….lol! Sorry your veggies burned. 🙁 And the speghetti recipe sounds really good!!

      haha! Emily, you are so funny. They drive me crazy sometimes too. I only wear a watch when I’m running or teaching a class.

      Maybe we just need really fancy, pretty watches and we’ll like them. 🙂

    I wish I could come get my arse wooped at one of your spin classes!! I have been wanting to take classes for awhile..but waiting for some cashflow. I am drooling over your pasta…YUM…i’m a huge fan of adding eggs to things! Dakota has a backpack too 😉

      I would love to whip your arse in a spin class. 🙂 Maybe you could get the guest passes at some gyms (usually they are a week or two) and sample all the gyms in your area. Then you’ll know which one to join when you have $$ and also get some spin classes in – for free! 🙂

      I thought of you when I was posting about the backpack. I’m glad you are already in the know!

    Thanks for your comments on my blog… thanks for coming over and checking it out! I just had to say, I am 2 years out from supporting my husband through law school…what a wild ride! Not always easy to live with someone who is learning to argue professionally, eh? 🙂 Anyway, I know all the of the trials and tribulations, and the rewards as well (a honey happy with his career is a great thing for the whole fam). Psyched to check out your blog!

    I wear a watch while running, but I broke it on Wednesday. I have to put it in my pocket now because I have to hurry or I will be late to work.
