Happy Monday! I hope your week is off to a good start. I was swamped at work (I know, I’m a broken record these days) and didn’t leave until after 6:30. And I still had to go grocery shopping after work so I could make dinner. But hey, this sunset over Trader Joe’s made it a little bit better.
So, it’s almost 8:45 and I just finished eating dinner. At least I have everything I need to cook for the week now, and I know that I have tomorrow off from cooking duties; John is going to make dinner from this new cookbook he just got. π
Here’s what I’ve got planned this week.
M – Quick Tuscan White Bean Soup (just ate it – delicious! I used the pre-diced pancetta and just spooned it out, leaving the cooking fat in the pan. Then I sprinkled the cooked pancetta over the soup at the end.)
T – Salmon but John wants to surprise me, so recipe TBD π
W – Quinoa Salad with Red Bell Pepper & Cilantro
Th – Crockpot Bourbon Chicken Sandwiches (using goat gouda + GF buns)
F – Roman Summer Salad
S – Shaksuka with Feta (I’ve made this 3 times and love it. i’m going to try it with goat cheese this week since TJ’s was out of sheep’s feta. They only had cow feta. I didn’t think any feta was cow’s milk?? I digress…)
I’ve been trying to save the recipes I’m most excited for as weekend meals so that I’ll want to stay in rather than dine out every Friday and Saturday. π

atMy favorites from last week were Cajun Shrimp Veggie Bowl, and Huevos Rancheros (both gluten and dairy free, too!) This week I’m excited to make chilli, and Butternut Squash Mac & Cheese…it is finally the right kind of weather!
The soup looks great! I might have to start a free trial from Cooks Illustrated to get the recipe π

Yes, you will love Cooks Illustrated. I’ve never had a bad recipe from them and some of their recipes are the best I’ve ever had….like their blueberry scones (back when I ate flour/butter)…oh my INCREDIBLE.

atThat roman salad looks amazing. I think that will go on my plan for the week too! Does sheep/goat cheese bother your stomach less? I stopped eating dairy because I am nursing and he doesn’t like it when I eat a lot of dairy but I really love cheese. Looking for ideas to get my Caesin fix.

atYes, my stomach handles sheep & goat cheese MUCH better than cow’s cheese. But I’ve also noticed I can do hard cow cheese, like parmesan, much better than softer cow cheeses like cheddar and brie. But man, I miss sharp better. Give the goat & sheep’s a try though! Hope it helps! xo

atyay! thanks for reminding me to bring it back! John’s dinner cooking duties got postponed until tomorrow – because he cut my grass tonight. π But, I made the quinoa dish tonight and holy moly, it’s amazing!
