Happy Monday! I hope your week is off to a good start. I was swamped at work (I know, I’m a broken record these days) and didn’t leave until after 6:30. And I still had to go grocery shopping after work so I could make dinner. But hey, this sunset over Trader Joe’s made it a little bit better.
So, it’s almost 8:45 and I just finished eating dinner. At least I have everything I need to cook for the week now, and I know that I have tomorrow off from cooking duties; John is going to make dinner from this new cookbook he just got. 🙂
Here’s what I’ve got planned this week.
M – Quick Tuscan White Bean Soup (just ate it – delicious! I used the pre-diced pancetta and just spooned it out, leaving the cooking fat in the pan. Then I sprinkled the cooked pancetta over the soup at the end.)
T – Salmon but John wants to surprise me, so recipe TBD 🙂
W – Quinoa Salad with Red Bell Pepper & Cilantro
Th – Crockpot Bourbon Chicken Sandwiches (using goat gouda + GF buns)
F – Roman Summer Salad
S – Shaksuka with Feta (I’ve made this 3 times and love it. i’m going to try it with goat cheese this week since TJ’s was out of sheep’s feta. They only had cow feta. I didn’t think any feta was cow’s milk?? I digress…)
I’ve been trying to save the recipes I’m most excited for as weekend meals so that I’ll want to stay in rather than dine out every Friday and Saturday. 🙂
