I’m not really a sandwich person. They are typically boring and the textures are just…mush. But I’ve been on a bagel kick lately (I like this kind) and it’s amazing how the bread can make or break a sandwich. Don’t you agree?
You know what else makes or breaks a sandwich? Condiments. Problem is, I’m not a mayo or a mustard person. I like condiments like hummus, pesto or something equally delicious. Favorite condiment of late? Nutritional yeast (NY). Let me show you.
(Side note: If you are new to nutritional yeast, I talk about it more on this post. Long story short, it has a cheesy flavor and it’s a good source of protein and b-vitamins.)
Anyway, back to the bagel sandwich. So, take a bagel, toast it, top with some raw spinach, and sprinkle some NY on top. (Doesn’t everyone store N.Y. in old sorbet containers?)
Next up, a fresh-out-of-the-pan poke & spread egg, then more NY.
Then some tomato slices and salt and pepper.
Then – you guessed it – more nutritional yeast.
Toss the bagel lid on there and you’ve got yourself a nutritionally packed powerhouse.
(Once it was assembled, I tossed it in the microwave for about 10 seconds to help the nutritional yeast soak into the layers a bit so it wasn’t too dusty.)
Even Maizey was stunned that I was eating and enjoying a sandwich.

atThis is a great idea. I lived off of pitas with one egg and sprouts but always melted provolone on it. I just wish there was a good way to transport egg sandwiches to work… I’m guessing a few hours in the fridge would not be too delicious.
Also, mayo creeps me out. Eggs and vinegar? Just seems wrong.

atI love mustard! Plain ol’ yellow mustard. But I do agree, hummus and pesto do make a better “spread” options for sandwiches. I love this new way to eat NY!

atMmm, I have such a thing for bagel sandwiches. Not so much sandwiches on bread, but I adore them on bagels. Yours looks like something I would love!
I also love mustard and mayonnaise, but favorite non-traditional condiment is probably a roasted red pepper spread that they have at my favorite sandwich place in Boulder, CO. I also like cream cheese on my veggie sandwiches. (Great, now I’m hungry for a sandwich at 7:30 in the morning. ;-))

atI never met a condiment I didn’t like. I actually love different kinds of mustard (I have about 6 different kinds in my fridge right now) but I really love things like pesto and hummus too.

atI used to hate mustard – but now I like it…zesty/spicy mustard rocks.
And I love love love using pesto or hummus as a condiment. But I use way more hummus than is allowed if you’re going to call it a condiment. My favorite hummus these days is TJs white bean and basil – tastes just like pesto!

atBoth yellow mustard and mayo gross me out, too. I like dijon mustard for salad dressings, but that’s about it.
I’m a big fan of Mediterranean-type condiments for sandwiches: hummus, olive spreads, red pepper spreads, pestos. We also go through a lot of Sriracha hot sauce in my house.
