Happy Monday! I wasn’t feeling well this morning. I called in sick, took some medicine, and went back to bed. I woke up at 2 PM. Not kidding.
When I’m not feeling well, the only food I want involves carbs and more carbs. Today, my diet has consisted of homemade bread, cookies from last night’s outing, and these biscuits. And I have the Pioneer Woman’s mac & cheese in the oven. Still not kidding.
Now, let’s get onto these biscuits I’ve been telling you about. (Looking for gluten-free biscuits? Here’s my recipe for those!)
Get ya dry ingredients and stir ‘em all together. I probably should have used a whisk. Ehhh..whatever.
Measure 3/4 c heavy cream. Oh just do it.
Pour cream over dry ingredients and let your puppa sniff it.
Stir until the dry ingredients are incorporated. Don’t overmix yo.
Dump the dough on a floured surface and briefly knead until it’s just smooth.
Pat the dough out to about 3/4” thickness. Cut with drinking glass. Or a biscuit cutter if you don’t have a drinking glass.
Place on greased (or mat or parchment lined) pan. Bake at 350 degrees (on a rack placed in the top third of your oven) for about 15 minutes.
When they are just cool enough to handle, break apart, spread a little butter on that and eat. And be grateful for biscuits. Because they make this world a better place.
Quick & Easy Biscuits
{makes 8 biscuits}
I have subbed 2% milk for the cream in these before. It was a mistake. They were still good, but they weren’t GOOD. Live a little and use cream.
Ingredients
- 2 c all-purpose flour
- 2 t white sugar
- 2 t baking powder
- 1/2 t salt
- 1.5 c heavy cream
How To
- Preheat oven to 450 degrees. Put an oven rack in the top third of the oven.
- Whisk all the dry ingredients together.
- Using a spoon, stir in the cream and mix just until a rough dough forms.
- Lightly flour the countertop and dump dough onto it. Knead 20-25 times until the dough is smooth.
- Using your hands, pat the dough until about 3/4” thick. Cut out biscuits and place on a greased cookie sheet.
- Bake until golden brown, about 15 minutes. Serve hot.

atI only crave carbs when I’m sick too. When I was in the hospital last year, I begged the nurse for a PB and Jelly sandwich and a bowl of cheerios. I would have given my left arm for this meal at the time.

atI love biscuits. There is nothing better than a hot, flaky biscuit. My favorite biscuit topping is honey and/or butter. I mean, if you are going to use heavy cream, go for the honey and butter!

atThese look so good! How many does this recipe make? Love, love, LOVE PW’s recipes! Marlboro Man’s Favorite Sandwich is a favorite around here, but I don’t make it often (lots of butter – and we add cheese, too). My comfort food is worse than just carbs – it’s deep-fried carbs. Hush puppies. I’d never seen them dipped in butter until I moved to NC. As far as comfort goes, that’s got to be some of the guiltiest comfort around…. but still yum!

atI do the same thing when I’m sick. And I make very simialr biscuits, only I use 1T of sugar and leave out the baking soda and salt. I also stir with a fork (I have no idea if that really makes a difference, but mama said to…). Easiest biscuits ever!

Homemade biscuits are the best. On Sunday after my long run there was a fresh batch at my parents house. Those biscuits were the best post run treat… Although probably not the healthiest but what are ya gunna do 🙂
