Blueberry Peanut Butter Smoothie Recipe

I love a peanut butter smoothie. Something about it makes me feel like I am drinking a milkshake! This blueberry peanut butter smoothie is one of my favorite go-to recipes. I use So Delicious coconut milk and it adds a coconut flavor that completely changes the whole smoothie––In the best way!

This smoothie is full of protein and healthy fats from the peanut butter and it is the perfect post-run treat.

Is peanut butter good for you?

Yes! Peanut butter is high in healthy fats. News flash! You need healthy fats in your diet. Yes, peanut butter is high in calories, but generally a small amount is good for you! And man, does it help the flavor!

Is Coconut milk good for you?

coconut milk is rich in saturated fat, but it’s also high in the medium-chain fatty acids that boost metabolism. So, yeah! It’s a great non-dairy alternative! If you have a dairy intolerance then this is a great addition to any smoothie that calls for milk. I like So Delicious so much that I use it in most of my smoothies and I’m not even dairy intolerant! The unsweetened version is even whole30 compliant!

How long does coconut milk last?

mine lasts about a week and 1/2!

I am such a fan of this recipe. It’s so easy, and I bet you have most of the ingredients already in your pantry! I always use Vega protein powder and it’s been my favorite for a few years now! You can even try this recipe with any fruit in your fridge. My guess is that any berries would make this yummy. Let me know if you try something different!

Description

This protein packed smoothie is perfect with blueberries or any of your favorite berries. Add So Delicious coconut milk to make a creamy milkshake-like smoothie!

Ingredients

  • 2 handfuls spinach
  • 1 cup blueberries
  • 1 heaping tablespoon peanut butter
  • 1 scoop vanilla protein powder
  • handful of ice
  • 2 cups So Delicious coconut Milk

Instructions

Blend for 1-2 minutes until creamy and well blended

I’ve been hooked on this combo after a friend made it for me; I’m particularly obsessed with the peanut butter flavor…obviously. (Free life advice: never trust someone who doesn’t like peanut butter.) This was another win!

    I tried this recently too, it is delicious 🙂 My favorite remains Silk vanilla unsweetened almond milk, but it’s definitely nice to mix things up!

    I hate when non-dairy milk coagulates in coffee or tea! It’s so disgusting and completely ruins it. Good to know that this passes the test! I’ve been wanting to pick some up and now I think I have to swing by the grocery store after work 🙂

    I LOVE Silk Cashew Milk! I actually like it better than the Unsweetened Almond Milk which was my go-to milk for years! The Cashew Milk is all I buy now!

    I also really love smoothies and your recipes look great? Does the green color ever turn you off though when you its supposed to be a peach smoothie? Appearance is a big deal with food for me.

      Hi Elena!

      The color bothered me at first, but not anymore. I’ve been drinking green smoothies for years now, so when they’re not green, they seem weird! 🙂 You could try drinking it out of a dark container with a lid & straw to get past it!
