Happy Monday! I hope the start of your week has gone swimmingly. Mine started out with a bang. An oatmeal bang. A sunflower seed butter bang.
I cooked my extra thick oats in almond milk instead of water. Win.
I put goji berries in the mix while it cooked. Win.
I topped it all with sunflower seed butter. Total win.
Combine

1/2 c dry oatmeal

1 c unsweetened vanilla almond milk

1 T goji berries
-
Bring to a boil and then reduce to a simmer. Cook for 5 minutes. Read Ashley’s blog while it cooks. See it in the above picture? Hiiiii Ashley!

But after a week of small tastes, I was suddenly hooked and went through my jar very quickly. Luckily my friend was at Trader Joe’s a few weeks ago and she kindly imported some more for me. (The closest TJs is about 2 hours away.) Thanks Allison!
What’s your favorite nut butter? I’d say peanut butter and sunflower seed butter are tied for first place with almond butter in 2nd place. Although, if I get to count Nutella as a nut butter, then that places above almond butter.

atIn my humble hazelnut-influenced opinion, Nutella is unto a category in itself. Otherwise it would continually crush the foods around it. Its the Chuck Norris of food spreads. To allow it to be compared to other foods would be an injustice to all. I’m actually getting emotional just talking about it.
Admitting you have a problem with Nutella is the first step.

atYessss sunflower seed butter is soooo good! I like the sunbutter natural crunchy brand. I love pretty much all nut butters! Almond and peanut butter are tied for first for me, though.

atPeanut butter is my favorite, but I do love sunflower seed butter. I got a few samples at a half I ran in Hickory (by the way it’s a really fun one) and tried it on some waffles as pre- run fuel and loved it.

atSunflower butter is the bomb dot com. I’ve seen it at other stores besides TJ’s. I believe they have it at Target. It’s called Sun Butter!

atTeri- The Hickory Charity Chase Half is the first Saturday in June! The parking was super easy, the race is smaller but lots of people from lots of states come. it is VERY well organized, the scenery was great! It was pretty hilly but it was my first ever half and I finished in a very decent time AND they have a new route this year to cut out some of the worst hills. The swag bag has free Balega socks (you may not need them running barefot) and the after party has Biscuitville and all the Cheerwine you can drink. It is the most fun and relaxed race I’ve ever done! I hope you can do it. You can look them on on Facebook and get the info and website. (ps it’s cheap for a half and you still gt a medal)

atI’m all about PB! After spending 3-ish years as a nut-free home due to my daughter’s peanut allergy, we were thrilled to learn she outgrow it about a year ago. So – unless it’s a sandwich going to school with her (she’s in a nut-free classroom), it’s PBand J for us (we use soybutter as our PB substitute – not fans of sunflower seed butter).

atOMG…I just became recently addicted to Sunflower Seed Butter! I have a tree and peanut sensitivity so this is the PERFECT solution. I spread it on english muffins, mix it with my greek yogurt, top my oatmeal with it and I’m thinking about venturing into some baked goods using it very soon!

atYou can make it yourself! I too bought a jar recently, and within 5 days I had eaten the whole thing. Then I was a local market and saw that the roasted/salted seeds were only 1.56 per pound. So I bought a huge bag, then I put about a cup into my bullet with a couple packets of stevia and wa-la! Home made nut butter 🙂 I had no guilt eating ALL of it that I made 🙂
