Happy Columbus Day! I’m enjoying a day off with nothing planned. I might do some yard work (it feels amazing outside) and think I’ll wander down to Camino at some point. (I even moreso want to wander down after calling to see if they had quiche and Lindsay answered. I haven’t seen her in too long!)
Alright, here’s what I’ll be making for dinner this week!
S – Lime Kalamata Mint Vinaigrette Salmon from Longevity Kitchen [this was amazing! can’t wait to try other recipes from this cookbook.]
M – Roman Summer Salad (didn’t get around to making this last week)
T – Roasted Acorn Squash with Wild Rice Stuffing (I took these wrapped in foil to the RayLen Vineyards Dog Days Music Festival exactly one year ago! Delicious!). I’ll probably double this so I have leftovers for lunch.
W – Shakshuka with Feta (again, didn’t get around to making this last week.)
Th – My Famous Three Bean Vegetarian Crock Pot Chili (except I might make it non-vegetarian and add in some beef)
F – leftovers
S – wing it. perhaps literally.
