Gluten-Free/ Weekly Meal Plans

This Week’s Dinner Plan

Happy Columbus Day! I’m enjoying a day off with nothing planned. I might do some yard work (it feels amazing outside) and think I’ll wander down to Camino at some point. (I even moreso want to wander down after calling to see if they had quiche and Lindsay answered. I haven’t seen her in too long!)

Alright, here’s what I’ll be making for dinner this week!

S – Lime Kalamata Mint Vinaigrette Salmon from Longevity Kitchen  [this was amazing! can’t wait to try other recipes from this cookbook.]

M – Roman Summer Salad (didn’t get around to making this last week)

T – Roasted Acorn Squash with Wild Rice Stuffing (I took these wrapped in foil to the RayLen Vineyards Dog Days Music Festival exactly one year ago! Delicious!). I’ll probably double this so I have leftovers for lunch.

W –  Shakshuka with Feta (again, didn’t get around to making this last week.)

Th – My Famous Three Bean Vegetarian Crock Pot Chili (except I might make it non-vegetarian and add in some beef)

F – leftovers

S – wing it. perhaps literally.

FYI, I have a Pinterest board for recipes I’ve tried & loved.

This weekend was Canadian Thanksgiving, so my meal plan for the week is…use up all the turkey haha!

If you (or any other commenters) have any ideas, let me know 🙂

So I made this last week and it was really delicious (but I used trader joes marinara)! I was surprised with the spaghetti squash since I had never made it before. http://www.skinnytaste.com/2009/01/spaghetti-squash-with-meat-sauce-46-pts.html

And I made these today for snacks to take to work…definitely tasty and not too sweet at all!

I am making this chili for our dinners this week http://www.supergluemom.com/paleo-chili-recipe-all-meat-veggie/. Your chili looks amazing, just wish I could tolerate eating beans 🙁

I should try that recipe. I’m hit & miss with how well (or not) I handle beans.

BTW, there is going to be a Paleo Dishcrawl event in WS in November, if you want to come! Only tough thing is that it’s a weeknight. :/

That sounds like a fun event! Do you know what night it is?
