Gluten-Free/ Weekly Meal Plans

This Week’s Gluten-Free & Dairy-Free Meal Plan

Since John is definitely still running the marathon (I’m debating whether to just cheer him on or do the 1/2 marathon), we are going to eat a lot of carbs this week! Here’s what I’ll be cooking. 

S – Spaghetti Squash with Marinara (I just stab the squash multiple times and microwave until it’s soft to the touch. Then I cut it in half, discard the seeds and scoop out the squash)

M – Apple Almond Quinoa with Maple Sausage [I’m making this right now and can’t stop munching on the sausage]

T – Pineapple Cashew Fried Rice

W – Creamy Butternut Squash Pasta (I’m going to try the recipe linked but sub in GF fusilli and thyme instead of sage)

Th – Salsa Crockpot Chicken over Rice (I just take a jar of salsa – any salsa will do! – and dump it over chicken breasts and cook on medium for 4 hours)

F – Spaghetti

S – Marathon Day for John! I’m planning a surprise dinner out afterwards. 🙂

    What marathon will John be running?

    Yum carbo loading is the best! My husband is running Marine Corps on Sunday – unfortunately I am not so I have to hold back on the carbo loading 🙂

      he’s running the Greensboro, NC one. I should hold back on carb loading but I figure since I trained for the race and just got injured that I should at least be able to enjoy carb loading. 😉

        Oh so awesome! I grew up in Greensboro, NC. We are trying to get back there! My husband applied for a residency there so we are keeping our fingers crossed!

        I am injured as well so I know how that is! I am looking forward to cheering him on though!

    Yum, I love spaghetti squash dishes. I made baked squash empanadas last week! I’m hoping to post the recipe soon.

    Don’t throw out the squash seeds! Give em’ a good rinse, cover in seasoned salt, and bake up just like pumpkin seeds. So delicious!
