This Week’s Gluten-free Meal Plan

S – Grilled Chicken (thanks Tommy!) + Kale & Brussels Sprouts Salad (via Sugar & Grace)

M – Mustard Chicken + crispy roasted broccoli with toasted almonds, lemon & pecorino (via a Beautiful Plate)

T – Likely dinner with friends

W – Gnocci with marinara sauce & arugula salad (I found a gluten-free gnocci at Harris Teeter I can’t wait to try!)

Th – Simple Blackened Salmon (via me 😉 + black rice + broccoli

F – TBD, I’m headed to Charlotte that night for a birthday party for Paula! Can’t wait to see my Charlotte friends.

    That simple blackened salmon looks so delicious. With all the salmon I’ve been seeing on blogs, I’m craving it for dinner this week sometime too. I had it a lot last week already, so this week for me dinner will be spaghetti squash with sauce and Parmesan and grilled chicken (already prepped) for a few nights, and a wild card with some frozen wild perch that was on sale, along with frozen veggies, and whatever I figure out to do with it all.

      I LOVE spaghetti squash – I like it just with butter (errr, earth balance) and salt & pepper since that’s how my mom always served it growing up. 🙂
