M – Leftover Pioneer Woman Chickpea Curry – I made this on Saturday and it’s awesome!
In addition to curry for dinner, there was also lots of snacking on cheese, bacon wrapped apricots & toffee at a girls’ night/bible study/Stitch Fix try-on session :). We just finished the Genesis She Reads Truth series and got together to chat about it (in addition to daily texts with our thoughts as we read). And, of course, girls’ nights with good friends tend to evolve to involve a million different things. 🙂
T – Tommy grilling burgers (yay for warmer weather!) + kale salad (kale dressed in a lemon-olive oil dressing + goat cheddar + sliced almonds
W – Crockpot Peach Mango Chicken Tacos – this was super simple; I’ll share the recipe tonight! I made it last week and it was a hit with both me and Tommy so I’m doing it again. I served it with a side of mashed sweet potatoes.
Th – Dinner with friends, location TBD
F – TBD, likely dining out after we complete workout 16.2 of the CrossFit Open
I have a ton of food in my fridge, including 2 full containers of Teeter Thai. When we picked up our food on Sunday night after grocery shopping, it took forever and they gave us two freebie entrees to apologize! So nice and so tasty. So, I’ve be eating that food for lunch for a few days. I had purchased a ton of produce for lunch salads before we got all that Teeter Thai, so I’ll use up the produce with some green smoothies & green juices (which I make in my Vitamix & just strain through a mesh colander) so nothing goes to waste. I may end up freezing some chickpea curry and brown rice too since I have a bunch leftover, and I know that will freeze better than Thai food.
