Happy Monday! Here’s what I’m cooking up this week.
S – Pan-Seared Salmon with Mango Chutneyย [recipe soon! Super simple]
M – Sriracha Quinoa Cakes with Goat Cheese & Spinach
T – Sweet Potato & Turkey Quinoa Chili
W – John’s planning it ๐
F – Leftovers, wing it, or eat out
When I meal plan, I write down everything I know I need from the recipes and then list out to the side the things I’m not sure I have on hand (especially spices that I may be low on). I check the side items before heading to the store and add them to the list if necessary. Then, I don’t run into any AH-CRAP-I’M-OUTTA-CUMIN moments while cooking after a long day at work when I don’t feel like going to the store. ๐

atOh some of these look delicious. Can I come over for dinner!? We have a kind of ‘off” week so I don’t have anything set in stone. Guess I am going to be “winging” a bunch of it.

This week, the menu is:
M: Turkey Swedish meatballs, mashed potatoes, gravy, green beans (man meal, as I call it)
Tu: Sandwiches/salads (we are both working later)
W: Marinated Korean sirloin tip steaks, rice, roasted veggies (brussels or butternut squash)
Th: Italian chicken sausage and ww pasta casserole
F: Leftovers or wing it, as you said!
