First: Thank you all SO much for your kind, supportive words about my recent move! I’ve said it before and I’ll say it again: I really have the nicest readers/blends/friends. I loved hearing from so many of you who are local and loved checking out your blogs! It makes me feel like I already have friends here. 🙂 I hope to bump into you guys around town! Anyway, thanks again to all of you for cheering me on. <3
In the weeks leading up to the move and then for the week after, I ate out a LOT. A lot a lot a lot. Mostly because of convenience and trying to decrease stress while packing. And then because my kitchen was all packed up. And then because I had to eat ALL THE TEETER THAI before I moved. And then because damn, there are some good restaurants in Charlotte and I want to try them all.right.now. You know how that goes.
That’s led to a pretty unhealthy diet so I’m getting back on track this week. I did some serious grocery shopping and spent a lot of time in the kitchen this week. Here’s what I’m eating/have been eatnig this week! (You’ll notice a lot of Paleomg recipes – I love her stuff! So simple and so delicious. Plus she’s hilarious.)
S – Paleomg Chicken Enchilada Bake — this makes a lot and is awesome to pack for lunch. I’ve eaten it all week. It’s extra tasty if you top it with extra goat cheese before reheating.
M – Paleomg Almost 5 Ingredient Pizza Spaghetti Pie – also awesome leftovers!
T – Arugula salad with roasted butternut squash, deli turkey, chopped dried figs, walnuts (I just threw together stuff from my fridge)
W – Warm Spinach Salad with Blackberries, Goat Cheese & Walnuts, topped with pan-seared salmon
Th – leftovers
F – play by ear
S – play by ear (maybe order from Three Amigos since they deliver to my neighborhood!)
I also made these Paleomg Sausage Egg Cups that I’ve been eating for breakfast everyday. I just pop them in the microwave for a minute.
And this Paleomg Pmpkin Coffee Cake is awesome (although I think next time I’d make it in a smaller pan or bake it for less time; mine was a little burned and dried out and I took it out 15 minutes early!). I made it, let it cool, sliced it, wrapped in foil and stuck it in my freezer and just pull out one slice at a time when I want some. If it’s out, I’d have no self control and it’d be gone in a day.

atI ordered Three Amigos last night – SO good. And I’ve eaten at the Peculiar Rabbit twice – their burger and fries are amazing. I was underwhelmed by Cabo Fish Taco, loved Smelly Cats Coffeehouse and have done some serious damage to my health and wallet with all the times I’ve visited Amelie’s. 😀
