This Week’s Meal Plan

One thing that’s become totally apparent to me lately is that I function better with a schedule. And one of the best ways for me to keep a schedule is to plan out my dinners. For some reason, it helps ground my week. Maybe because I don’t want to waste all the groceries I buy, so I better plan my evenings to allow time to cook? I don’t usually plan out my breakfast or lunches, but I got a few emails about what I eat for those meals so I’ll try to share more regularly about those too.

Breakfast:

I’m on a smoothie kick so I’ll be doing lots of those these week. Lately my favorite combo is a frozen banana + frozen mango or fig + spinach + hemp seeds + water. I’ll usually chase it with a hard boiled egg for some extra protein. I love hemp seeds in smoothies for protein and healthy fats and they don’t have an overpowering flavor. I’ve found them for the best price at Trader Joe’s; they’reby the oatmeal and cereal.

Lunch:

Likely lots of fall salads – this butternut squash & shrimp salad is one of my favorites. I’m going to use apples instead of cranberries for a little extra crunch. And because honey crisp apples are amazing right now. I made a batch of this lentil salad to have on hand too. I didn’t have any kalamata olives so I subbed in avocado.

Dinner

M – World’s Best Chicken (crockpot style) with roasted cauliflower (I made this last night. I liked it but I’d use chicken tenders or cut & pound the chicken breasts to be thinner)

T – Shakshuka with Feta

W – Pizza Spaghetti Pie (I’m going to tweak a version of this)

Th – Slow Cooker pot roast or a fall salad. I haven’t bought the roast yet since I didn’t want to buy it and not get to make it – life gets crazy!

F – leftovers

S – leftovers/dine out
