These Vanilla Coconut Protein Balls with protein powder make an awesome afternoon snack when your sweet tooth hits and come together in just 5 minutes.
A while ago, I got a huge container of plain brown rice protein powder. Huge as in FIVE POUNDS. I’ve been trying to figure out ways to use the protein powder since it tastes terrible on its own so I can’t really just chug it after a workout. So, the solution seemed to be incorporating it into recipes. This recipe is a winner. I find that these taste better (texture and flavor) at room temperature, but I keep them stored in the fridge. You can sub in other protein powder, but you may want to nix the vanilla and adjust the sweetness, depending on what’s already in your protein.

5-Minute Vanilla Coconut Protein Balls

- 1/4 cup brown rice protein powder
- 1/4 cup hemp seeds
- 1/4 cup coconut manna/coconut butter
- 1 tablespoon maple syrup
- 1/2 tablespoon water
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
Put all ingredients in a mini food processor and pulse a few times to incorporate. Add additional water if needed (add in very small increments!) to make it form a dough.
Roll into 1" balls. Makes 10 balls.
Store in the fridge and bring to room temperature before eating.

Approximate nutrition stats per ball: 161 cal, 6 g fat, 24 g carbs, 4 grams protein
Ingredient notes: I used Naked Rice Protein, Manitoba Harvest hemp seeds, and Artisan coconut butter.
