While I don’t set resolutions, I do set goals each year. And usually my goals come up throughout the year and not something I set on January 1. However, there were 3 things I knew from the beginning of the year that I wanted to work on.
Reduce coffee consumption
I loooove coffee. But my intake steadily increased over the past year to where I was drinking 6-8 cups a day, with 5 of those cups before I even walked out the door to head to the office. I used to have just one cup of coffee 3-4x a week and it was kind of a treat. What changed all that? This guy.
Once I got a drip coffee maker (when I’d previously only had a tiny 8 oz French Press), I started chugging coffee like it was water because it was so easy to make a large pot! To reduce my coffee intake, I want to focus on making coffee an “experience” again and really savoring a good cup of coffee. So, to do so, I’m going back to using a french press and I also finally got a Capresso Infinity Conical Burr Coffee Grinder, which I’ve wanted for years!
Now that I’ve been grinding my beans fresh (which is super quick & easier than I expected) and using my french press, coffee is back to being a morning ritual and my AM consumption is back to pre-drip-coffee-maker levels of just 2 cups. I definitely need to make my Orange, Spice & Everything Nice Coffee soon!
2. Make more exciting side dishes
I have a habit of not really planning side dishes when I meal plan. I usually just end up roasting some veggies with olive oil and salt & pepper. While I LOVE roasted veggies, I’d like to get a little more creative and also make a bigger batch that will last a couple days for leftovers and so I don’t have to make a new side dish every night. My kitchen is pretty well stocked, but I don’t have great baking ware — just a couple of rectangular glass dishes, which totally work — but I think having a cute baking dish will inspire me to use it more. Plus, when I go to friends’ houses for dinner, I like to be able to bring something a little more presentable.
Isn’t this CorningWare French White casserole dish cute? I think it’ll be perfect for making my Dairy-Free, Gluten-Free Oatmeal Bake, Gluten-free Blueberry Peach Cobber, and Pineapple Salsa Chicken with Goat Cheese.
I have a bad habit of putting my pots in the dishwasher. I KNOW. I also have a bad habit of continuing to use pots that have nonstick coating flaking off, either from being scratched or worn down in said dishwasher. Eating food cooked on those pots freaks me out a little since I feel like I’m eating teflon, which is obviously not good. I’m working to replace my pots as soon as they show signs of flaking and also am buying some stainless steel. (I don’t think I’ll ever be able to go 100% stainless steel…it’s just not practical for me.)
Look at this beauty! I’m so excited – it’s the perfect size and I love the extra depth. I think this will be a super versatile pot. It’s the Circulon Symmetry 5-quart Non-Stick Covered Saute Pan. I really like Circulon products; they’re more affordable than some other brands, but I find the quality is comparable. I think this will be perfect for making Mushroom Risotto, Clams & Spaghetti with Cabernet Sauce, and Sauteed Scallops with Fresh Tomatoes.
