Farro Avocado Salad. Grains + Greens = Perfection

I try to eat greens everyday, whether it’s a salad or smoothies. But sometimes I’m just not in the mood for smoothies and sometimes I get really sick of salads loaded with veggies. Enter salads topped with grains. Greens + Grains = perfection. This Avocado Farro Salad one is one of my favorites alongside a piece of toasted and buttered whole wheat flax bread.

Farro Avocado Salad

  • 2-3 c mixed greens
  • 1/2 avocado, sliced
  • 1 small chopped tomato
  • 1/2 cooked farro
  • 1 t olive oil + 2 t white wine vinegar + salt & pepper

The farro adds a great chewiness and hearty texture, and also gives this salad staying power. If you don’t have farro, brown rice is a good substitute too. And, feel free to add any vegetables that you have on hand. Some crunch from sunflower seeds or pumpkin seeds would be great too!

    The weather has been playing games here in Raleigh too–it was a lovely 50 degrees and sunny yesterday…and now it’s gray and icky. Boo.

    Beans (especially chickpeas and black beans), avocado, nuts, and dried or fresh fruit. Yum. Caramelized onions, too.

    I eat salads at LEAST once a day:) My favorite topping would have to be artichoke hearts! They’re my favorite thing, I think I eat a can a day it’s fine;) Nuts are always a fun addition, too! Especially cashews.

      I used to LOVE artichoke hearts. I think I OD’d on them though because I have a huge Costco-sized jar of them that I haven’t touched in 6 months.

    I LOVE feta cheese, craisins, apples, balsamic and honey. I never, ever tire of this combo. I think I would choose this if forced to pick one meal for the rest of my life!

      yes, that’s a great idea! I’m out of farro at the moment but when I get more, I’ll do a post on it! (Waiting until I buy more so I can put up pictures of it pre-cooked.)

    Love putting grains on salads!!! Love putting roasted veggies on salads, they really help add flavor and texture to the lettuce…and yes avocados make everything better!!

    Hard boiled eggs are right up there…but I definitely have others! We both LOVE whole cooked farro. I hope it doesn’t bother my stomach when I try to incorporate it back in. I can totally relate on the socks + vibram look. So hot!

    Your salad looks so good. Gonna make that for my lunch today. I love, love, love avocado on salad. When I use avocado I don’t even need an oil for the dressing, I just add a little balsamic vinegar.

    I love salads and I love adding in whatever I can to my salad… blueberries, glazed walnuts, black beans, craisins, avocado… the more mix-ins the better.

    It’s reeeeally hard for me to have a salad without cheese!! It doesn’t have to be a lot, but just a bit brings sooo much flavor to the mix! My two favorites are blue/gorgonzola or feta, but goat cheese is good too.

    These days my favorite salad addition is roasted, salted sunflower seeds. Just a tablespoon or so adds salt, crunch, richness, and vitamins E and B1, yum!

    My favs are avocado, chickpeas, olives, sunflower seeds, goat cheese, strawberries or blueberries, dried cranberries, apple. Not necessarily all in one although I am sure it would be great that way too!!

    I’ve been adding a little fresh squeezed lemon juice to my salads for a few months now. It adds such a refreshing, light flavor. I love it and hardly eat a salad now without it!

    Lately, I’m all about marinated cubes of tofu!! Other than that, salads are all about mixing textures to me and getting a good contrast of flavours. That’s why I love me some sliced almonds in my tofu-topped salad, feta and sunflower seeds in my apple balsamic salad, and avocado with my apple-cider vinaigrette. Hopefully we’re helping you out of that rut with all these yummy ideas!!

    i had the best salad at a restaurant last night—arugula, persimmons, pears, walnuts, gorgonzola, and a vinaigrette! it was so good!

    That salad looks great! I love hummus, lentils, olives, and red peppers on salads! Lots of healthy fats, and super satisfying! Quinoa makes a super delicious grain topping to salads as well! The possibilities are endless when it comes to salad toppings!

    Pomegranate arils can be good on salad. Also hummus. And I never use oil, just white balsamic vinegar. i LOOOOVE white balsamic vinegar, I highly recommend you try it.

    I do the sauteed veggie thing a lot. Like spinach leaves, tomato, cucumber, avocado, maybe a sprinkle of quinoa, and then some sauteed onions, mushrooms, zucchini, etc. Drizzle some white balsamic vinegar and some freshly ground pepper = Yummy, makes me want it right now.

        make sure it is FOR REAL white balsamic vinegar and not some infusion, or white rice, or anything else. It will literally say white balsamic if you got the right thing. You can find it in some of the nicer stores in the vinegar section….I love it even more than normal balsamic….I’m sure you can find it at trader joe’s or whole foods and maybe some normal stores. you’ll have to share if you find it and like it! I discovered it at Publix as it was necessary in a recipe for some watermelon feta salad – then fell in love. The vinegar and I are getting married, that’s how much we are in love….

    Avo is an absolute must on a salad:) I’ve recently discovered balsamic vinegar + orange juice + olive oil + salt & pepp makes a fabulous salad dressing.
